Garlic and potato soup is great during cold winters and is easy to make. Here is recipe that serves two.
You need 1 lb. red potatoes, 3 large garlic cloves, 1 tbsp. vegetable oil, 4 cups water, 1/2 cup thinly sliced scallion greens. You also need a heavy saucepan, chefs knives, cutting boards, and a food processor.
- First you need to finely chop the garlic and cut the potatoes into 1/2 inch pieces.
- Second warm oil in the saucepan over moderate heat.
- Cook garlic and potatoes until pale golden (the potatoes will not be cooked). Stir occasionally and do not let the garlic burn.
- Now add water and salt to taste.
- Simmer for about 20 minutes or until the potatoes are very soft.
- Next put the soup into the food processor or blender and puree until smooth, now reheat.
- Finally add in the scallions and salt and pepper to taste.
