How to Make Garlic Potato Soup

potato soupGarlic and potato soup is great during cold winters and is easy to make. Here is recipe that serves two.

You need 1 lb. red potatoes, 3 large garlic cloves, 1 tbsp. vegetable oil, 4 cups water, 1/2 cup thinly sliced scallion greens. You also need a heavy saucepan, chefs knives, cutting boards, and a food processor.

  1. First you need to finely chop the garlic and cut the potatoes into 1/2 inch pieces. 
  2. Second warm oil in the saucepan over moderate heat. 
  3. Cook garlic and potatoes until pale golden (the potatoes will not be cooked). Stir occasionally and do not let the garlic burn. 
  4. Now add water and salt to taste. 
  5. Simmer for about 20 minutes or until the potatoes are very soft. 
  6. Next put the soup into the food processor or blender and puree until smooth, now reheat. 
  7. Finally add in the scallions and salt and pepper to taste.
