Pancakes are not usually healthy but when you make Buckwheat pancakes they are very healthy and contain protein, fiber and omega fatty acids.
This recipe is for two and contains lots of great ingredients listed below:
- 1 cup Buckwheat Flour
- 1/2 cup Buckwheat Grouts - sprouted or cooked
- 1/4 cup ground flax seed
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1/4 cup hemp protein
- 2 tsp baking powder
- 1 banana
- 1/2 cup blueberries
- 1 1/2 cup water
First get a medium bowl and mix the buckwheat flour, ground flax, seed, hemp protein, baking powder, cinnamon, nutmeg and stir well
Then use a mixer or blender to mix the banana and water together and then slowly add the dry ingredients until it is smooth. Then fold in the buckwheat grouts and blueberries by hand.
Now you need to oil a frying man (coconut oil is recommended) and hit the pan to a medium temperature, this is to keep the fatty acids from being destroyed by heat. Pour some of the batter in circles and allow them to cook for 5 minutes or until the bubbles rise. Then flip the pancake and allow it to cook for another 5 minutes.
